Brix is defined as the percent of sucrose by weight in pure sugar solution. By common usages it has come to mean percent weight of total solids in sugar solution having an arbitrary scale based on density. The brix measurement & control of sugar solution, juice & liquor in raw sugar. White sugar manufacturing as well as in allied food processing where sugar solution & similar liquids are used. Density-measuring devices involving hydrometers, double dip tube bubbles & manometer have been available. These sampling methods are not useful for continuous process. the on line brix system is based on a weight of column of sugar liquor by periodic time interval.
